Oatey Pancakes
Mum makes an oat pancake that’s similar to these (more oats I think), but since I didn’t have the recipe handy, I just made these up this morning to be eaten with strawberries and white ganache (and when that ran out, ice-cream).
h2. Ingredients.
* 2 cups plain flour
* 7/8ths of a cup of rolled oats
* 3 eggs
* 1/2 cup of castor sugar
* 1 teaspoon of bi-carb soda
* 1/2 teaspoon of baking powder
* 2/3 cup of milk (approx.)
* 1/2 cup of warm water (approx.)
* 40g butter (melted)
* pinch of salt
h2. Method.
Combine the flour, sugar, oats, salt, bi-carb and baking powder in a large mixing bowl.
Add the melted butter and eggs, stir until half the dry ingredients are combined.
Add the milk and stir well until you have a thick batter.
Now add the water a bit at a time while stirring until the batter becomes thin.
Allow to stand for half an hour (batter will thicken slightly).
In a hot frypan, melt some butter, add one and a half soup spoons of batter to the pan for each pancake.
When the pancake bubbles, turn over. When firm, serve.
Works well in a stack, layered with strawberries and drizzled with warm white ganache.
