Baked Porridge Pie

I really felt like porridge this morning, but I know from previous experience that the kidlets are not that keen on rolled oat porridge. So I set about making something that would feed my desire for rolled oat porridge, but still appear tasty and not resemble porridge in order to fool the children. Thus the Baked Porridge Pie was born.

h2. Ingredients.

* 1 cup of Rolled Oats
* 2.5 cups of Milk
* a pinch of salt
* 1 large spoon of Honey
* 2 eggs
* 0.5 teaspoon of Vanilla Essence

h2. Method.

Prepare the porridge as normal, i.e. combine the oats, milk and salt and microwave on high for 3 minutes, stir, microwave for another 3 minutes, stir, and then microwave for a further 2 minutes (or do it in a pot on the stove).

Transfer the now cooked porridge to a mixing bowl.

In a separate bowl or jug, whisk the eggs and vanilla essence together briskly.

Now while stirring the oats (with a whisk), pour in the eggs. Whisk until combined, and then add the honey and whisk further.

Pour the mix into a pie dish, and back at 210C for 20 minutes, then reduce the heat to 175C and bake for a further 5 minutes.
Remove from the oven (the centre should be wobbly) and allow to cool for 10 minutes.

Cut into wedge shaped pie slices and serve. If you’re feeling decadent, you could drizzle a little extra honey over the top and place a dollop of whipped cream next to the pie slice.
