Corn and Sausage Fritatta

It’s Saturday, so that means Cooked Breakfast (well usually). Thus this morning I decided to make a fritatta with sausages and because Aleks seems to like corn, I added a small tin of creamed corn (this didn’t help btw, he still didn’t eat it – just what are you meant to do with a three year old that declares he doesn’t like sausages?)

Anyway, this is a quick and easy breakfast dish, full of protein to help you face a busy Saturday.

h2. Ingredients.

* 5 sausages
* 5 eggs
* a large pinch of salt
* 1 tspn of dried basil
* 0.5 cup of chickpea flour (besan flour)
* some milk (sorry, I didn’t measure that)
* 125 g of creamed corn
* some grated cheese to top (I used mozzarella)

h2. Method

Chop the sausages into 1.5 cm lengths and fry in a frypan.

In a mixing bowl, beat the eggs, and other ingredients (except the cheese). Pour the mix over the sausages in the frypan.
Cover with a lid and cook until the edges are firm (the middle should still be runny).

Now place the frypan under a grill and cook until the centre is firm, cover with grated cheese and grill until browned.

Serve with a little blob of fresh pesto.

    Respect his wishes and don’t try to force him, he may be a natural vegetarian – they do exist – or perhaps there is something in the sausages not especially suited to his particular body. One thing is for sure by trying to change what he wants to eat you may
