Burritos topped with Corn Salsa and Cheese

Using my basic Chile con Carne recipe (or near approximation), I made Burritos this evening. However, Aleks likes corn and does not seem to like Chile con Carne, so in an effort to inspire him to eat it, I topped my burritos with a corn salsa and some cheese before baking.

h3. The Burritos

* chile con carne
* 10 burrito tortillas (large flour tortillas)

h3. The Salsa

* 250g of Creamed Corn
* juice of 1/4 lemon
* 1 clove of garlic crushed in 1 teaspoon of salt
* two soup spoons of sour cream
* a sprinkle of pepper
* a healthy dash of Tabasco Sauce

h2. Method.

Prepare the Chili con Carne as usual (see linked recipe above). While that’s cooking, prepare the salsa.

In a small saucepan, put the creamed corn and garlic, stirring over a low flame. Add the lemon juice and taste. It should be pleasantly tart but not overly so. Add the remaining ingredients and stir well. Continue to warm through over a low flame until your ready for it, stirring occasionally.

To assemble the burritos, spoon a portion of the chili con carne onto a burrito tortilla, roll and place on a baking tray. Repeat until you’ve filled all your burritos and used all the chili con carne.
Now spoon corn salsa over each burrito, then sprinkle with grated cheese. Bake at 200C for about 10 to 15 minutes or until the cheese has browned.

Serve with sour cream and jalapeño chilies.

    I believe I found your blog via a thread on chocolate & zucchini, or failing that, from a link from someone else who posted on that site.

    I try to update whenever I have something new I’ve prepared, and the Australian catagory tends to get stuff that can’t really be catagorised as some other form of cuisine. 🙂
