Chickpea Pancakes and Bacon

It’s shopping day today, so there were no eggs left. Thus our traditional cooked breakfast for Saturday mornings was in danger of not happening!

Recently I’d heard various people talk of Chickpea pancakes, and decided to give them a go. These proportions make enough for a family of five (without teenagers).

h2. Ingredients.

* 1 cup of Chickpea flour, sifted
* 0.5 teaspoon of Salt
* some water (I’ll get to that in the method, below)
* butter for frying

* 3 rashers of bacon, cut in half.

h2. Method.

Place the sifted flour and salt in a mixing bowl and add enough water to make a thick batter (not too thick, but not watery).

Put you bacon in a fry pan, cover and fry on medium-low heat.

Warm a small cast iron pan on medium heat, and melt some butter in it.
Put about a fifth of the batter in the pan, and tilt the pan back and forth to spread the batter.
Flip when the edges start to look done, the base should have started to brown.
After a similar amount of time, flip once more to check the brownness and then serve on a plate, with a portion of bacon on top.
