Lemon Meringue Pie
This is a recipe off an old Nestlé Sweetened Condensed Milk tin, which makes a really tasty Lemon Meringue Pie. The Sweetened Condensed Milk lends a caramelly finish to the filling. It is assumed you know how to make Short Pastry (or were lazy enough to buy some)
Ingredients
- 1 tin NestlĂ©’s Sweetened Condensed Milk
- 2 eggs
- 2 oz castor sugar
- grated rind and juice of 1 large lemon
- 8 oz short pastry
Method
Roll pastry and bake in pie plate.
Separate eggs.
Mix together Condensed Milk, lemon juice, rind and egg yolks.
Pour mixture into pie shell.
Prepare a meringue: beat the egg whites until stiff, then fold in the castor sugar
Pile the meringue on top of the lemon mixture
Bake in a slow oven (150C) until lightly brown (approx 30-40 min).
Notes
Best served after some cooling off as the filling sets properly when cooled.
