Nutty Oat Biscuits

_It’s been wet and cool for the last couple of days and today I felt the need to bake. However, since I was working for most of the day I could not indulge in my baking temptation, so it wasn’t until after we’d gotten the children off to bed that I finally had some time to do so._

_Of course I didn’t really have a plan, beyond “probably biscuits”, so I thought about the flavour I was after and decided on oats. Now I could have done the whole Anzac Biscuit thing, and as much as I do enjoy a lovely chewy Anzac biscuit, that wasn’t really what I was after tonight. So with no better plan, I made something up as I went along. Therefore I present the Nutty Oat Biscuit._

h2. Ingredients.

* 1.5 cups of Rolled Oats (not instant)
* 0.5 cup of Almond Meal
* 1 egg
* 1 dozen (approx) hazelnut kernels
* 0.25 cup of Sweetened Condensed Milk

h2. Method.

Pre-heat your oven at around 200C.

Place the Oats, Almond meal, egg and hazelnuts in a food processor and whizz until combined (and the nuts chopped).
Add the sweetened condensed milk, and whizz until the mix starts to clump.

Now grease a baking tray with some butter.

Take a spoon of mix and make a small ball with your hands, place on the baking tray and press down with a fork (flatter biscuits will be crunchier, fatter ones softer). Repeat until all your mix has been exhausted.

Bake for about 10 to 15 mins, the outside should just be browning when done.

Cool immediately on a cooling rack.
