Beef and Bean Curry on Sweetened Rice

This is one of my basic curry like dishes I do from time to time. No two are ever exactly the same, as I tend to improvise during the cooking, however all variants tend to include meat, tomatoes, onions and curry seasonings and are served on rice.

h2. Ingredients

h3. for the Curry

* 500g beef (I used rump steak, if you use a cheaper cut you may need to cook it longer to attain the same tenderness)
* 1 large brown onion
* 1 capsicum (bell pepper)
* 2 cloves of garlic
* 1 Tablespoon of curry powder
* 1 teaspoon of garam marsala
* a good splash of soy sauce (I insist on using a good quality brewed soy sauce like Kikkoman’s)
* salt
* ground black pepper
* a pinch of Szechwan peppercorns
* some peanut oil
* 1 can of roma tomatoes
* a quantity of baby green beans (I used frozen ones)
* 1 teaspoon of lime pickles

h3. for the Rice

* 1.5 cups of long grain (or Jasmine or Bas Mati) rice
* about 1 Tablespoon of palm sugar
* 2.5 cups of water
* pinch of salt

h2. Method

h3. To make the Rice…

Place all the ingredients in a suitably sized casserole dish (with lid) and stir. Microwave at 50% for 22 minutes. Fluff with a fork before serving.

h3. To make the Curry…

Heat the oil in a wok and add the finely diced capsicum and sliced onion. Stir frequently, adding the soy sauce, curry powder and garam marsala when the onion softens.
Slice the beef thinly and add to the wok. Stir through, and then add the tomatoes and lime pickles, salt, pepper and Szechwan peppercorns.
Simmer until reduced by a third, then add the finely chopped garlic and green beans. Continue to simmer, stirring as needed until reduced to at least half the original volume. The sauce should now be thick but not stodgy. If over-thick, add a little water, if too runny reduce further.

Serve on a bed of rice.
