Beef and Beans on Rice
h2. Ingredients.
* 500g minced beef
* 1 onion finely chopped
* 1 capsicum (finely chopped or grated)
* 3 cloves of garlic, finely chopped
* 1 small (80g) can of corn kernels
* 1 can (440g) of Roma tomatoes
* 1 can (400g) of Refried Black Beans
* 1 chili, finely chopped
* 1 teaspoon of Mexican Chili Powder
* 1 teaspoon smokey paprika
* dash of soy sauce
* juice of one lime
* pinch of lime zest
* salt and pepper
* splash of olive oil for cooking
* one rasher of bacon, chopped
h2. Method.
Lightly fry the onion, capsicum and garlic until soft, add mince separating well with a wooden spoon.
Brown the mince slightly, then add the tomatoes, breaking up with a spoon.
Simmer for a short while then add the remainder of ingredients.
Cover and simmer for up to an hour (can be eaten as soon as it’s cooked, but will simmer for a long time if need be), stirring occasionally.
Steam some rice in the usual fashion. Serve stew on the rice with a dollop of sour cream.
