Sweet Fruity Yorkshire Pudding
For breakfast this morning I was hunting around for something sweet with a possibly caramel component. I also wanted a pudding, so the idea of a fruity yorkshire pudding was born.
h2. Ingredients.
* 7/8ths of a cup of plain white flour
* 1/2 cup of milk
* 2 large eggs
* 1/2 cup of water
* pinch of salt
* 1/4 teaspoon of Dutch cinnamon
* sprinkle of ground Nutmeg
* sprinkle of All Spice
* sprinkle of Cloves (ground)
* sprinkle of dried ginger powder
* about 16 dried dates, chopped
* about a dozen pecan nuts, chopped
* roughly 1/8th of a cup of sultanas
* about three Tablespoons of butter
* good sprinkling of brown sugar (maybe 2 Tablespoons)
h2. Method.
Pre-heat your oven at 250C.
In a mixing bowl, place the flour, salt, cinnamon, nutmeg, cloves, all spice, ginger and milk and mix well. Add the eggs, one at a time, mixing after each one.
Finally mix in the water such that you end up with a thin crepe like batter.
Add the fruit and nuts and allow to sit.
Place the butter in a pie dish and place in the hot oven. Once the butter is all melted and just starting to smoke (but not burn), remove from the oven and pour in the batter, making sure to evenly pour the fruit across the whole pie dish.
Return to the oven for 15 mins.
Turn down the heat to 200C and cook for a further 4 mins.
Now sprinkle the brown sugar over the top, and place under a grill for about 2 mins.
Serve with cream.
