Strawberry Strüdel

It’s Strawberry season in Queensland at the moment, so they are relatively cheap. Thus one tends to find punnets of them in one’s shopping trolley. Of course, you can’t just have Strawberry Clafoutis all the time, so tonight I decided to try my hand at making a Strawberry Strüdel instead.

Strawberry Strüdel


  • 1 sheet of puff pastry
  • 35g of butter (softened)
  • 2 Tablespoons of rolled oats (quick oats are probably better in this instance)
  • 3 Tablespoons of desiccated coconut
  • 3 Tablespoons of brown sugar
  • 1 Tablespoon of sultanas
  • 1 Tablespoon of raisons
  • 30ml of rum (dark)
  • 50ml of boiling water
  • 250g Strawberries
  • some flaked almonds
  • a sprinkle of Dutch cinnamon



First, place the sultanas and raisons in a microwave proof small bowl. Pour in the rum and boiling water and allow to soak.

Pre-heat your oven to 175ºC.

Grease a baking tray with some butter, and lay the sheet of puff pastry on it as a diamond.

In a mixing bowl, place the butter, oats, coconut and brown sugar. Mix thoroughly. You may need to work through with your fingers until you get a crumbly consistency.

Spread this mixture along the centre of the pastry diamond, from tip to tip, leaving the “wings” (top and bottom of the diamond) bare.

Slice the strawberries into 2mm thick slices (approx 4 slices per strawberry depending on size). Lay these out on the crumbly filling in two layers.

Microwave the sultana/raison mix for 35 seconds on high, so they plump up a little. Spoon on to the strawberries, being careful not to spoon the liquid in.

Sprinkle with cinnamon and almonds, then fold the wings in, and baste with the pastry with the sultana/raison/rum liquid.

Bake for 25 mins on the bottom shelf and then serve with ice-cream.
