Pear Strudel

Pear Strudel and Custard

Tonight we had a light dinner so I decided to make dessert. Given I had some puff pastry sheets in the freezer, I opted for a pear strudel.

Ingredients.

* 2 sheets of puff pastry (no I don’t make my own as I am not a masochist)
* 1 large can of drained sliced pears (or alternatively, stew about 6 to 8 fresh pears and slice when cool)
* 1/8 cup of sultanas
* 3 Tablespoons of blanched sliced almonds
* some Dutch cinnamon
* some nutmeg
* some ground cloves
* some allspice (ground pimento)
* 3 Tablespoons of castor sugar dissolved in 75mm of boiling water to make a syrup
* about 2 teaspoons of butter

Method.

Grease a deep pie dish with butter and line with a sheet of puff pastry.
Arrange the pear slices in a circular fashion on in the dish.
Place small pieces of butter evenly over the pears.
Sprinkle the pears with some of the sugar syrup and then the spices (not too much, but enough for taste).
Add the sultanas and some of the almonds over the pears.

Now cut the other sheet of pasty into strips and weave into an open mat.
Place the pastry mat over the dish and trim the edges.
Brush the pasty with the remaining syrup and sprinkle with the remaining almonds.

Bake for 30 mins at 170ÂșC (or until pastry is golden).

Serve with fresh custard.
