Lebanese Style Date Crescents
Hunting around for something to cook for breakfast this morning, I cottoned onto the idea of making a semolina pastry of some sort. A quick google around for ideas and I set about making these delicious little crescent pastries.
h2. Ingredients.
h3. Pastry
* 2 cups of semolina
* 1/2 cup of plain white flour
* 1/2 cup of butter or other shortening
* enough boiling water to fill a cup when the butter is in it
h3. Filling
* roughly 2/3 cup of cashews
* roughly 2/3 cup of dates
* 1 teaspoon of orange blossom water
* 1 dessertspoon of honey (1/2 Tablespoon)
* 1/4 teaspoon of cinnamon (preferably Dutch)
* 1/8 teaspoon of all-spice (approx)

Combine all ingredients in a bowl and mix well. Knead a little and press into the bowl. Cover and place in the fridge until you’re done with the filling (about 20-30 mins).
When ready, break off a small piece and roll out between two sheets of baking paper such that you end up with a circle of dough about 5mm thick. Place a Tablespoon or so of filling in the centre, fold the dough over it to form a crescent and place on a baking sheet (or greased baking tray). Repeat until you’ve made sufficient for your needs (dough and filling will keep in the fridge).
Bake at 200C (fan forced) for 16 mins or until the edges start to brown slightly. Serve with Custard.
h3. Filling
Finely chop the cashews and dates. In a mixing bowl combine all the ingredients and stir well with a butter knife until you have a well combined rough paste.
Alternatively, you could combine all the dry ingredients in a food processor and whiz coarsely, then add the honey and orange blossom water by hand.
