“Fiery Death” Hot Chili Sauce

I had some chillies in a bowl that needed using (as in they’d go off if I didn’t), so I figured the quickest and easiest way to preserve them would be to make a hot sauce (like Tabasco).

While Tabasco uses fairly benign chillies, I had 2 habanero and 3 unknown but presumed hot red chillies. The resultant sauce should be used very sparingly.

h2. Ingredients.

* 2 habanero chillies
* 3 plump red chillies (they may have been “Cherry Bomb” variety)
* juice of 1 lime
* zest from 1/4 of the above lime
* slice of lime peel
* 1 clove of garlic
* half a teaspoon of salt

h2. Method.

Cut the stems off each of the chillies.
With a large mortar & pestle, mash the chillies and garlic, and lime zest.

Sterilize a suitable jar or bottle.

Combine all the ingredients in the jar (or bottle) and mix well.

Seal and store in the fridge.

h2. Notes.

Use sparingly as it really is quite hot (the habaneros make sure of that, and the fact that we don’t remove the pith and seeds).
