Blueberry Dumplings

Blueberry Dumplings with Custard

Ingredients.

Dumplings

  • 3/4 cups of Self Raising Flour
  • 1 dessert spoon (1/2 Tablespoon) of Treacle
  • 1 dessert spoon of butter (melted)
  • 1/4 cup of milk

Sauce

  • 1 punnet of blueberries
  • about 1 cup of water
  • 1 Tablespoon of caster sugar

Method.

Dumplings

Mix the flour, treacle and butter together until well combined.
Add the milk and stir through with a butter knife until combined, then knead lightly.
Roll out into a cylinder about 1 inch in diameter and then cut into 14 pieces.
Roll each piece into a ball.

Sauce

Wash and cut in half all the blueberries.
Place in a medium saucepan with the water and sugar. Bring to the boil.

Add the dumplings and then lower to a simmer. Cover and simmer for 20 minutes.

Serve with cold pouring custard.
