Beef and Beans on Rice
Ingredients.
- 500g minced beef
- 1 onion finely chopped
- 1 capsicum (finely chopped or grated)
- 3 cloves of garlic, finely chopped
- 1 small (80g) can of corn kernels
- 1 can (440g) of Roma tomatoes
- 1 can (400g) of Refried Black Beans
- 1 chili, finely chopped
- 1 teaspoon of Mexican Chili Powder
- 1 teaspoon smokey paprika
- dash of soy sauce
- juice of one lime
- pinch of lime zest
- salt and pepper
- splash of olive oil for cooking
- one rasher of bacon, chopped
Method.
Lightly fry the onion, capsicum and garlic until soft, add mince separating well with a wooden spoon.
Brown the mince slightly, then add the tomatoes, breaking up with a spoon.
Simmer for a short while then add the remainder of ingredients.
Cover and simmer for up to an hour (can be eaten as soon as it’s cooked, but will simmer for a long time if need be), stirring occasionally.
Steam some rice in the usual fashion. Serve stew on the rice with a dollop of sour cream.
