Beef and Beans on Rice

Ingredients.

  • 500g minced beef
  • 1 onion finely chopped
  • 1 capsicum (finely chopped or grated)
  • 3 cloves of garlic, finely chopped
  • 1 small (80g) can of corn kernels
  • 1 can (440g) of Roma tomatoes
  • 1 can (400g) of Refried Black Beans
  • 1 chili, finely chopped
  • 1 teaspoon of Mexican Chili Powder
  • 1 teaspoon smokey paprika
  • dash of soy sauce
  • juice of one lime
  • pinch of lime zest
  • salt and pepper
  • splash of olive oil for cooking
  • one rasher of bacon, chopped

Method.

Lightly fry the onion, capsicum and garlic until soft, add mince separating well with a wooden spoon.
Brown the mince slightly, then add the tomatoes, breaking up with a spoon.
Simmer for a short while then add the remainder of ingredients.

Cover and simmer for up to an hour (can be eaten as soon as it’s cooked, but will simmer for a long time if need be), stirring occasionally.

Steam some rice in the usual fashion. Serve stew on the rice with a dollop of sour cream.
