Impossible Pie
_This is a recipe I got from my Mother, who in turn got it from her Mother, and so forth.
It’s called Impossible pie because the ingredients when mixed are very runny, but when the pie is done there’s a base, a filling and a crusty top._
Ingredients
- 1 Dessertspoon butter or margarine Use butter. Butter tastes better
- 4 eggs
- 1/2 cup plain flour
- 2 cups milk
- 1 cup coconut
- 1 cup sugar Castor sugar gives the nicest effect
- 2 teaspoons vanilla essence. Always splurge out for the good stuff and use real essence

Method
Blend all ingredients. Beat with eggbeater/ mix master for one minute.
Pour into ungreased pie plate.
Bake at 180C / 350F for one hour.
Notes
The flour forms a base, the centre is an egg custard and the coconut rises to form a crust
Best served after allowing to cool.
