Golden Syrup Dumplings
Yet another recipe from my Mother.
We used to eat these on cold winter nights for dessert to warm us up before bed. They also work well slowly warmed in the microwave for breakfast the next morning.
- 1 1/2 cups self raising flour
- 30 grams butter
- 2 tablespoons golden syrup
- 1/2 cup milk (approximately)
- 45 grams butter
- 1 cup brown sugar, firmly packed
- 1/2 cup golden syrup
- 2 1/2 cups water
Sift flour into bowl
Rub in butter
Add syrup and enough milk to make a soft dough
Roll tablespoons of dough into balls with floured hands
Combine butter, sugar, syrup and water in large pan. Stir over low heat until sugar dissolves.
Bring to boil
Add dumplings in single layer, cover, return to boil.
Reduce heat, simmer for 10 minutesor until dumplings are well risen and cooked.
Serve hot immediately with whipped cream and/or ice cream.
